The certificate course on “Food Industry Management System & Good Manufacturing Practices” started on January 28th 2025 at 10:30 am and completed on January 31st 2025. The content and curriculum of the course were comprehensive and informative, providing us with a deep understanding of food safety regulations, hygiene practices, and management systems.
It covered various aspects of Food Safety Management System, Good Manufacturing Practices, Prerequisite Programs on food safety, Quality Management System, and Health and Safety Practices. The course material was well-structured, making it easy to follow and understand to us students. We were provided with knowledge of food safety laws and regulatory standards (such as HACCP, ISO 22000, FSSC 22000). Our resource person Jophy C. J. demonstrated an in-depth understanding of the subject matter. His expertise and ability to convey complex concepts in a clear and engaging manner was truly helpful. His positive attitude and friendly demeanor made the sessions both engaging and comfortable for learning.
Also, as part of the course, on 31st January, we had the opportunity to go on an industrial visit to Flavournest Pvt. Ltd., Thiruvaniyoor, a company that specializes in the manufacturing and export of a wide range of frozen foods. We observed the various stages of frozen food production, including raw material selection, processing, freezing, and packaging.
The visit helped us understand the importance of quick-freezing methods like blast freezing technology in maintaining food quality. Strict hygiene protocols, such as mandatory protective clothing and sanitization procedures, were followed to ensure food safety. We learned how Hazard Analysis and Critical Control Points (HACCP) principles are applied to prevent contamination at different stages of production.
The visit also highlighted the importance of proper packaging to maintain food freshness and prevent freezer burning. We saw how frozen products are stored in temperature-controlled warehouses and transported under strict cold chain management. The company representatives were knowledgeable and explained each process in detail, making the visit interactive and engaging.
This visit was highly educational and provided us with first-hand experience of the food production process, hygiene practices, and safety regulations followed in the frozen food industry. Seeing real world applications of what we studied in class reinforced our theoretical learning, deepening our understanding of frozen food manufacturing and safety protocols.
Overall, the course successfully enhanced our awareness and competency in food safety management, contributing to better hygiene and quality control in the food industry. We gained a thorough understanding of food safety regulations and best practices and awareness of international and national food safety standards. Real-world examples and in-depth knowledge made the sessions informative and enriching.
