The PG & Research Department of Microbiology organised an insightful Industrial Visit to the PDDP (Pala Diocese Dairy Project) milk processing unit at Vengoor on 14-11-2024 at 10:00 A.M. The visit provided students with an in-depth understanding of the industrial processes and microbiological aspects involved in dairy production. They had the opportunity to observe state- of-the-art equipment and techniques used to ensure the safety and quality of dairy products.
The visit began with an overview of milk collection and quality testing, where students observed the checks for fat content, protein levels, microbial load, and adulterants to ensure milk quality. They learned about pasteurization and homogenization, key processes to eliminate harmful microbes and achieve uniform consistency. The production of butter, ghee, and cream was demonstrated, showcasing the separation of cream, churning of butter, and the clarification process to produce high-quality ghee. A major highlight was the ice cream manufacturing unit, where students witnessed the steps from mixing ingredients to freezing, flavoring, and automated packaging. Additionally, they explored the Ultra-High Temperature (UHT) milk processing unit, which sterilizes milk and extends its shelf life through aseptic packaging. The visit also covered advanced packaging and storage methods, emphasizing hygiene and quality control at every stage. An interactive session with industry experts provided insights into food safety protocols,
microbiological quality assurance, and career opportunities in the dairy industry. This visit bridged the gap between theoretical knowledge and practical applications, equipping students with valuable exposure to modern dairy technology and inspiring them to explore careers in food processing, microbiology, and quality control.
